Apple & Raisin Tea Cake

A light summery tea cake
  • Flour - 1 cup + 1 tsp
  • Sugar - 1 cup
  • Eggs - 2 nos
  • Butter - 100 gms
  • Baking powder - 1 tsp
  • Brown sugar/demerera sugar - 1 tbsp.
  • Apples - 2 small - cored and diced
  • Cinnamon powder - 1 tsp
  • Raisins - a handful
  1. Preheat oven at 180 deg C.
  2. Grease and line a loaf tin.
  3. In a bowl , add together the diced apples,raisins,demerera sugar and cinnamon powder. Mix everything and keep aside.
  4. Sift the flour and baking powder together.
  5. In another bowl, cream together , sugar and butter, till light and fluffy.
  6. Add one egg at a time and beat after each addition.
  7. Gently fold in the flour into the mixture and form a batter.
  8. Add 1 tbsp. of the apple mixture to the batter.
  9. Pour into the greased tin and top with the remaining apple mixture.
  10. Bake for 35- 40 mins at 180 deg C.
  11. Serve warm.
